Rosé of Pinot Noir, Symonette Vineyard, Eola Amity, 2017
This direct press rosé was pressed into neutral oak and stainless steel barrels. The wine underwent spontaneous yeast fermentation and rested on its lees for 9 months before bottling.
Tom Symonette and his daughter live on the vineyard, in Eola Amity. There, Tom spends his days caring for the vines. He is as thoughtful about the farming as he is knowledgeable about viticulture. It is farmed organically and with much care. Everything is done by hand. It's a privilege to work with this vineyard and we look forward to making some of our best wines out of these 37 year-old vines over the years to come.
